Meatballs
Ingredients
- 1/2 pound lean ground beef or ground turkey
- 1/4 cup whole wheat or Italian bread crumbs
- 1 egg
- 3/4 tsp black pepper
- 1/2 tsp Italian seasoning (I didn't have any so I just put some basil, oregano, parsley, garlic powder and onion powder)
- 6 tbsp grated Parmesan cheese
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 zucchini, sliced
- 1 yellow squash, sliced
- 24 oz jar favorite spaghetti sauce
- Favorite pasta
Directions
- In large bowl, combine the beef or turkey, bread crumbs, egg, pepper, Italian seasoning, 4 tbsp cheese. Form into balls the size of walnuts
- Spray large nonstick skillet with cooking spray and heat over medium heat.
- Working in batches, add meatballs and cook for 15 minutes or until browned
- Remove to a bowl, leaving drippings in skillet
- In same skillet warm drippings over medium heat, add the onion and garlic. Cook for 5 minutes
- Stir in zucchini, yellow squash, spaghetti sauce, meatballs, cheese
- Heat to boilings
- Reduce heat to low, cover and cook for 20 minutes.
- Bring water to a boil in separate pan, add what ever kind of pasta you wish
