Whole Wheat Lasagna
Ingredients
- 1 lb ground beef or turkey
- 1/2 large onion, chopped
- 1 large clove garlic, miniced
- 1 1/2 cup low fat cottage cheese
- 1 cup fat free sour cream
- 1 zucchini, sliced
- 1 cup chopped spinach
- 1/4 cup Parmesan cheese, shredded
- 1/4 cup mozzarella cheese, shredded
- 8-10 whole wheat tortillas, 6" in diameter
- 1 jar of favorite spaghetti sauce
Directions
- Preheat oven to 350
- Spray nonstick skillet with cooking spray, place over medium heat
- Add ground beef or turkey and cook till no longer pink
- Add onion and garlic, cook until lightly browned
- Remove above mixture from skillet and add zucchini and cook for 5 minutes
- In a large bowl combine cottage cheese, sour cream, spinach and cooled zucchini
- Place tortillas on bottom of 13x9 baking dish, add small amount of sauce
- Place half of meat and cottage cheese mixture
- Cover with sauce and another layer of tortillas
- Place rest of meat and cottage cheese mixture
- Cover with sauce and another layer of tortillas
- Cover last tortillas with remaining sauce and cheese if desired
- Bake covered for 15 minutes, then uncovered for another 15 minutes
Serves about 6
