Ingredients
- 1 tbsp olive oil
- 1 onion, chopped (I like to use onion flakes)
- 1/2 red bell pepper, chopped
- 1/2 green bell pepper, chopped (you can find in the frozen section chopped bell peppers)
- 1/2 lb extra lean ground beef
- 1/2 lb ground turkey
- 1 cup chunky salsa
- 1 egg, beaten
- 3/4 tsp salt
- 1/2 tsp pepper
- 1 glove garlic, minced
- 1/2 cup cooked brown rice
Directions
- Preheat oven to 350
- Heat oil in small skillet over medium heat, add onion and bell peppers. Cook for 5 minutes or until tender
- In large bowl, combine the beef, turkey, salsa, egg, s & p, and garlic
- Stir in vegetables and rice.
- Place mixture in a loaf dish, pressing in all corners
- Bake for 45 minutes, or until meat is no longer pink
Makes 6 servings
If you want to make this ahead of time, I would just make sure the rice and vegetables are cooled before adding to the meat mixture. Then just put in loaf dish, cover and put in fridge till ready to cook.
