Whole Wheat Lasagna

Ingredients
  • 1 lb ground beef or turkey
  • 1/2 large onion, chopped
  • 1 large clove garlic, miniced
  • 1 1/2 cup low fat cottage cheese
  • 1 cup fat free sour cream
  • 1 zucchini, sliced
  • 1 cup chopped spinach
  • 1/4 cup Parmesan cheese, shredded
  • 1/4 cup mozzarella cheese, shredded
  • 8-10 whole wheat tortillas, 6" in diameter
  • 1 jar of favorite spaghetti sauce
Directions
  1. Preheat oven to 350
  2. Spray nonstick skillet with cooking spray, place over medium heat
  3. Add ground beef or turkey and cook till no longer pink
  4. Add onion and garlic, cook until lightly browned
  5. Remove above mixture from skillet and add zucchini and cook for 5 minutes
  6. In a large bowl combine cottage cheese, sour cream, spinach and cooled zucchini
  7. Place tortillas on bottom of 13x9 baking dish, add small amount of sauce
  8. Place half of meat and cottage cheese mixture
  9. Cover with sauce and another layer of tortillas
  10. Place rest of meat and cottage cheese mixture
  11. Cover with sauce and another layer of tortillas
  12. Cover last tortillas with remaining sauce and cheese if desired
  13. Bake covered for 15 minutes, then uncovered for another 15 minutes
Serves about 6

Meat Loaf with Vegetables

Ingredients
  • 1 tbsp olive oil
  • 1 onion, chopped (I like to use onion flakes)
  • 1/2 red bell pepper, chopped
  • 1/2 green bell pepper, chopped (you can find in the frozen section chopped bell peppers)
  • 1/2 lb extra lean ground beef
  • 1/2 lb ground turkey
  • 1 cup chunky salsa
  • 1 egg, beaten
  •  3/4 tsp salt
  • 1/2 tsp pepper
  • 1 glove garlic, minced
  • 1/2 cup cooked brown rice
Directions
  1. Preheat oven to 350
  2. Heat oil in small skillet over medium heat, add onion and bell peppers. Cook for 5 minutes or until tender
  3. In large bowl, combine the beef, turkey, salsa, egg, s & p, and garlic
  4. Stir in vegetables and rice.
  5. Place mixture in a loaf dish, pressing in all corners
  6. Bake for 45 minutes, or until meat is no longer pink
Makes 6 servings
If you want to make this ahead of time, I would just make sure the rice and vegetables are cooled before adding to the meat mixture. Then just put in loaf dish, cover and put in fridge till ready to cook.

Wild Rice Turkey Burgers

Ingredients
  • 1 cup wild rice
  • 1 lb ground turkey breast
  • 2 tbsp BBQ sauce
  • 1 egg, beaten 
Directions
  • Preheat oven 350
  • Prepare wild rice according to package directions
  • Large bowl, combine turkey, wild rice, BBQ sauce and egg
  • Divide into 4 burgers
  • Heat large skillet over medium-high heat, sear both sides of patties
  • Place on cookie sheet with tinfoil on it and bake for 10 minutes or until not pink
Serves 4

Meatballs

Ingredients
  • 1/2 pound lean ground beef or ground turkey
  • 1/4 cup whole wheat or Italian bread crumbs
  • 1 egg
  • 3/4 tsp black pepper
  • 1/2 tsp Italian seasoning (I didn't have any so I just put some basil, oregano, parsley, garlic powder and onion powder)
  • 6 tbsp grated Parmesan cheese
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 zucchini, sliced
  • 1 yellow squash, sliced
  • 24 oz jar favorite spaghetti sauce
  • Favorite pasta
Directions
  1. In large bowl, combine the beef or turkey, bread crumbs, egg, pepper, Italian seasoning, 4 tbsp cheese. Form into balls the size of walnuts
  2. Spray large nonstick skillet with cooking spray and heat over medium heat.
  3. Working in batches, add meatballs  and cook for 15 minutes or until browned
  4. Remove to a bowl, leaving drippings in skillet
  5. In same skillet warm drippings over medium heat, add the onion and garlic. Cook for 5 minutes
  6. Stir in zucchini, yellow squash, spaghetti sauce, meatballs, cheese
  7. Heat to boilings
  8. Reduce heat to low, cover and cook for 20 minutes.
  9. Bring water to a boil in separate pan, add what ever kind of pasta you wish
Makes about 4 servings

Spaghetti Sauce

Ingredients
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1can (28oz) plum tomatoes (with juice)
  • 2 tbsp tomato paste
  • 2 tbsp chopped fresh basil
  • You can also add what meat you would like
Directions
  1. Heat oil in 3 quart saucepan over medium heat. Add onion and garlic, then cook for 3 minutes or until tender. 
  2. Stir in teh tomatoes (with juice), tomato paste and basil
  3. Cook, stirring to break up the tomatoes, for 5 minutes or until mixture begins to boil.
  4. Reduce heat to low, partially cover and simmer, stirring occasionally, for 15 minutes.
Great on spaghetti squash :)

Dinner in a packet

Ingredients
  • 4 (4oz) boneless pork chops
  • 4 medium potatoes sliced
  • 4 large carrots, sliced
  • 1 cup frozen peas
  • 1/4 cup onion soup mix
Directions
  1. Place pork chop on double thickness heavy duty foil. Top with potato, carrot, peas. 
  2. Sprinkle with soup mix and a little olive oil. 
  3. Seal foil tightly
  4. Grill, covered on medium heat for 30-30 minutes, turning occasionally.

Surprise Muffins

Ingredients

  • 1 1/3 cups whole wheat flour
  • 1/3 cup wheat germ
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup brown sugar
  • 1/3 cup butter, melted
  • 1 egg
  • 1 cup buttermilk
  • 1/4 cup any flavor fruit jam
Directions
  1. Preheat oven to 425 degrees F (220 degrees C). Grease muffin cups or line with paper muffin liners.
  2. Stir together flour, wheat germ, baking powder, salt and brown sugar. In a separate bowl, mix together butter, egg and buttermilk. Stir milk mixture into dry ingredients; mix just until combined. Fill prepared muffin cups half full with batter. Make a depression in the center of each muffin and drop in 1 teaspoon of jam. Cover jam with additional batter.
  3. Bake in preheated oven for 20 to 25 minutes.

Garlic Cheese Breadsticks

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/4 cup toasted wheat germ
  • 1 (.25 ounce) package active dry yeast
  • 1/2 teaspoon salt
  • 1 cup water
  • 1 2/3 tablespoons olive oil
  • 1 tablespoon honey
  • 2 tablespoons minced fresh parsley
  • 1 tablespoon minced fresh basil
  • 2 cloves garlic, minced
  • 1/2 cup shredded part-skim mozzarella cheese
  • 1/2 cup shredded Parmesan cheese
Directions
  1. In a large mixing bowl, combine 1-1/2 cups flour, wheat germ, yeast and salt. In a saucepan, heat the water, 1 tablespoon oil and honey to 120 degrees F-130 degrees F. Add to dry ingredients; beat just until moistened. Stir in enough remaining flour to form a soft dough. Turn on to a lightly floured surface; knead until smooth and elastic, about 4-6 minutes. Cover and let rest for 10 minutes.
  2. Roll into a 15-in. x 10-in. rectangle. Transfer to a greased 15-in. x 10-in. x 1-in. baking pan; press dough to edges of pan. Brush with remaining oil. Sprinkle with parsley, basil and garlic. Cover and let rise in a warm place until doubled, about 30 minutes.
  3. Bake at 425 degrees F for 10 minutes. Sprinkle with cheeses. Bake 3-5 minutes longer or until cheese is melted and bread is golden brown. Cut into 20 strips. Serve warm.

Granola Bars

Ingredients

  • 2 cups quick cooking oats
  • 1 cup all-purpose flour
  • 3/4 cup packed brown sugar
  • 3/4 cup raisins ( I used cranberries)
  • 1/2 cup wheat germ
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup chopped English walnuts
  • 1/2 cup vegetable oil
  • 1/2 cup honey
  • 1 egg
  • 2 teaspoons vanilla extract 
 Directions
  1. Preheat oven to 350 degrees F (175 degrees C). Line a 9x13 inch baking pan with aluminum foil or parchment paper, and spray with vegetable oil spray.
  2. In a large bowl, stir together oats, flour, brown sugar, raisins, wheat germ, salt, cinnamon, and walnuts. In a smaller bowl, thoroughly blend oil, honey, egg, and vanilla; pour into the flour mixture, and mix by hand until the liquid is evenly distributed. Press evenly into the prepared baking pan.
  3. Bake 25 to 30 minutes in the preheated oven, or until the edges are golden. Cool completely in pan before turning out onto a cutting board and cutting into bars.  I would check the bars at 20 minutes, you can bake longer if you want a crunchy bar.
